Rheological Characteristics of Chitosan Solutions in 2% Acetic Acid


Abstract
Chitosan[(1¡æ4)-2-amino-2-deoxy-B-D-glucose polymer] was obtained via chitin[(1¡æ4)-2-amino-2-deoxy-B-D-glucose polymer]from the crust of a blue carb, Portunus tirtubercula-tus. 0.5-2.0 w/v% chitosan solutions in 2 v/v% acetic acid were prepared and their rheological properties were investigated in this study.
Polts of apparent viscosity us. revolution time of the chitosan solutions were well expressed by Lee-Ree stress strain equation, log?app=a/2.303t+log B. Plots of apparent viscosity us. rpm showed the rheopexy or flow characteristics of both rheopexy and thixotropy with the charge of the percent of chitosan solution and experimental temperature. Variation of equilibrium ap-parent viscosity of the chitosan solutions with temperature was found to follow Andrade¢¥s equa-tion, log ?_eq=log A+Ea/2.303RT, analogous to the Arrhenius equation and the energy of ac-tivation to flow calculated on the basis of this equation was 5.566 ¡­ 7.441 Kcal/g.mole. The concentration effect on the rheological properties of the chitosan solutions was best expressed by the equation log ?_sp/c=log R+B/2.303c.
